Originating from the Mediterranean region, the Iberian pig breed has spread widely in the southwest of the Iberian Peninsula, where these animals graze in exceptionally picturesque pastures (“dehesas”), which are rich in cork and holm oaks and, at the same time, acorns. The Iberian pig is an extremely old breed of animal that lived long before the domestication of pigs. It is believed that they appeared in the Neolithic period, around 12,000 years ago. The Iberian pig lives in mountainous areas, in the wild – precisely where they could find their favorite delicacies – acorns and nuts – nearby. The skin of the Iberian pig is gray and has very little hair. The high quality of the Iberico meat lies in the proper maturity of the animal – the pigs live for at least 10 months from birth to slaughter. Raw Iberico pork looks similar to beef: the meat is bright red or pink when cooked (standard pork is usually white when cooked).
