This oil retains its nutritional properties and exceptional taste, because it is pressed at low temperatures, using only mechanical processes. It is extremely versatile - suitable for both salads and ready-made food, goes well in marinades or stews, and is particularly pleasant with warm bread.

The Koroneiki olives from which this oil is made are considered one of the most valuable varieties in Greece due to their aroma and expressive organoleptic properties. Harvested between November and March in the Mirabello region of Crete, where their naturally balanced flavor develops, it is from these olives that the cold-pressed oil is extracted, which is characterized by a light spiciness and very low bitterness.

Free acidity is only 0.3–0.4%

Organoleptic profile: Balanced and well-structured. Fruity, medium tart, with a pleasant, slightly bitter aftertaste.
