Sirloin is one of the most versatile cuts of A5+ Wagyu beef. It has the intense marbling expected from Japanese Wagyu, but has a firmer texture than entrecote or fillet, making it perfect for thin slicing and high-heat grilling.

In this recipe, the beef is sliced ​​thinly to cook quickly but still maintain that unique "melt-in-your-mouth" sensation.


Ingredients

  • 200g A5 Wagyu sirloin
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 3–4 green onions, cut into 2.5 cm pieces
  • 1 tbsp toasted sesame oil
  • Neutral oil for frying (such as grapeseed or olive)
  • Pinch of sea salt flakes (Maldon)

Production process

  1. Prepare all ingredients. Since A5+ Wagyu cooks very quickly, prepare everything in advance and keep it on hand.
  2. Sear the meat. Heat a grill or cast iron skillet over medium-high heat. Add a little oil. Once the oil is hot, cook the sirloin for 60-90 seconds on each side. Depending on the thickness of the steak.
  3. Sauté the vegetables. In the same pan, add a little more oil if necessary. Add the peppers and spring onions. Cook for 2-3 minutes, until softened but still bright in color.
  4. Serve immediately. You can sprinkle a pinch of sea salt flakes on top to enhance the umami flavor.
