The right side dishes can enhance the flavor even further and make you feel like a true master chef.

Salad

Because Wagyu steak has a buttery, rich flavor, it’s a good idea to serve it with something light and refreshing. This will balance out the fat content of the steak and create a nice contrast in flavor. Salads are a great way to add some freshness to your plate.

Ingredients:

  • 3 cups corn kernels (about 3 large cobs)

  • 1/4 cup chopped spring onions

  • 1 tbsp. extra-virgin olive oil

  • 1/2 cup crumbled cotija cheese

  • 1 tbsp chopped fresh coriander

  • 1/2 tbsp. chili-lime spice mix

  • Kosher salt and pepper to taste

  • 1 lime

Production:

  1. Grill the corn on the cob over medium-high heat for about 10 minutes, then cut the kernels off the cob.

  2. Place the corn, scallions, and cheese in a bowl. Drizzle with olive oil and toss.

  3. Add the coriander and chili-lime seasoning, stir again. Season with salt and pepper.

  4. Before serving, sprinkle with a little more chili-lime seasoning and squeeze in lime juice.


Vegetable side dishes

Vegetables are another great way to balance out the rich flavor of Wagyu. This doesn’t mean they can’t be intense – on the contrary, when prepared properly, they can complement even such a luxurious meat. Ingredients:

  • 1.4 kg fresh Brussels sprouts

  • 1/4 cup olive oil

  • 3/4 tsp salt

  • 1/4 tsp garlic powder

  • 1/4 tsp. pepper

  • 1 cup balsamic vinegar

  • 1/2 cup sugar

  • 1 cup dried cranberries

  • 1/2 cup toasted almond flakes

Production:

  1. Preheat the oven to 200°C.

  2. Cut off the cabbage stalks and cut them in half.

  3. In a bowl, mix the cabbage with olive oil, salt, garlic powder, and pepper.

  4. Place on a baking sheet and bake for 30 minutes, stirring occasionally.

  5. In a small saucepan, combine the vinegar and sugar, bring to a boil, and simmer over low heat for about 20 minutes, until the sauce thickens.

  6. Mix the fried cabbage with the sauce, add the cranberries and almonds.


Starchy side dishes

Ingredients:

  • 680 g small red potatoes

  • 2 tbsp. olive oil

  • 1 tsp kosher salt

  • 1/2 tsp black pepper

  • 1 tbsp chopped rosemary

  • 1 tbsp. chopped chives

Production:

  1. Preheat the oven to 220°C.

  2. Cut the potatoes into four pieces (if the pieces are large, into even smaller pieces).

  3. In a bowl, drizzle with olive oil and mix.

  4. Season with salt, pepper and rosemary, mix again.

  5. Place on a baking sheet and bake for 35–40 minutes, turning occasionally.

  6. Sprinkle with chives before serving.
